L\u2019arriv\u00e9e de l\u2019automne et des pluies marquent un rendez-vous incontour-nable pour les mycologues et les majorquins passionn\u00e9s :la cueillette des champignons, lors d’une randonn\u00e9e quel plaisir de partir \u00e0 la recherche des nombreuses esp\u00e8ces insulaires souvent rares et cach\u00e9es dans les recoins des chemins de montagne. Parmi les vari\u00e9t\u00e9s insulaires de champignons comestibles, on trouve le Picornell (chanterelle) \u00e0 la couleur jaune soleil, l\u2019Amanita de los Cesares (oronge) au beau chapeau orang\u00e9,\u00a0 la Girgola d\u2019Estepa (chevalier gris) et le Boleto Negro (c\u00e8pe bronz\u00e9)\u2026
Mais le roi des champignons \u00e0 Majorque est l\u2019Esclata sang ou Rovellons qui pousse dans les pin\u00e8des. Esclata sang en majorquin signifie \u201c\u00e9clate le sang\u201d, ce bolet doit son nom au liquide rouge vif qui jaillit comme du sang \u00e0 la d\u00e9coupe du chapeau.<\/p>

Il s\u2019agit du champignon le plus pr\u00e9cieux, le plus rare et le plus appr\u00e9ci\u00e9 des majorquins, son prix est donc \u00e9lev\u00e9. Pour le savourer pleinement, les connaisseurs le d\u00e9guste seul, d\u00e9lica-tement grill\u00e9 avec de l\u2019huile d\u2019olive. Pendant la saison automnale, on trouve ces cadeaux de la nature, \u00e0 la carte des restaurants qui concoctent des plats typiques, des menus sp\u00e9ciaux ou des recettes uniques. Alar\u00f3, un joli village au pied des montagnes organise chaque ann\u00e9e, \u00ab\u00a0les Journ\u00e9es Gastro-nomiques du Champignon\u00a0\u00bb, un \u00e9v\u00e9ne-ment culinaire pour valoriser la cuisine de saison et la gastronomie majorquine.
